
Vegetable Frittata
I love Frittatas. They are so versatile. You can almost fill them with anything!
They are high in protein and are so filling and satisfying, served with a salad they make a perfect easy meal.
This is probably more lunch or dinner Frittata rather than breakfast! My opinion is Frittatas are for any time!!
For this Frittata I used the following but as I said mix up your own, put in what you like.
This serves 2 people
Ingredients
½ onion finely diced
½ leek, finely sliced
6-8 chestnut mushrooms sliced
Handful stemmed broccoli chopped
1 small potato cut into small cubes
3 eggs
Drop of milk
A small bit of feta cheese
Salt and pepper to season
Method
Put broccoli in boiling water for 3 min, drain.
Saute the onion for 5 min on a low heat
Add leeks and potato and saute for further 3-4 min
Add mushrooms and cook down for another few min
Add broccoli to the pan
Whisk up the 3 eggs and drop of milk in a bowl, season with salt and pepper
Cover vegetables with egg mixture
Top with some crumbled feta
I also add a sprinkle of dried chilli
Leave in hob for 2-3 min
Put on the grill and put the pan in under for around 5 min. Check centre is fully cooked before removing.
Serve up with a delicious green salad.
