Simple slow cooked butterfly leg of lamb
The best thing about this dish is that you season your meat, throw it into the slow cooker, add some ingredients later on and serve up melt in your mouth lamb.
2 tsp cumin
2 tsp turmeric
1 tsp coriander
1 tsp cinnamon
3 tbls olive oil
1 large onion sliced
250g mushrooms
3 potatoes
Butterfly leg of lamb (around 350g per person)
Mine is 700g for 2 ppl
Mix seasoning together and rub on lamb. Leave for 1 hour min seasoning. Preferable to do this night before.
I use my slow cooker but you can also use a casserole dish in your oven at 160 degrees.
Place onions in evenly in bottom of pot, season with salt and pepper. Place lamb on top on turn on for 4 hours.
Chop potatoes and steam for 10 minutes, add to pot along with sliced mushrooms.
Put back on for an hour.
Take out, taste and season.
The lamb should fall apart.
Put all in a serving plate and serve with a side of greens!
