Granola
I used to spend way too much time trying to find the perfect granola and was never fully satisfied so one day I just said, right I’m going to make one myself. This is so easy, healthy and so yum! It’s one of those things I always have in my kitchen. Perfect sprinkled over salads or on some natural yoghurt with some berries or over your porridge for a bit of extra yumminess!
Ingredients
60g sunflower seeds
60g pumpkin seeds
80g oats
80g mixed nuts
1 tbsp chia seeds
40g desiccated coconut
pinch salt
½ tsp cinnamon
40g coconut oil
40ml maple syrup
½ tsp vanilla essence
Dried fruit such as raisins and goji berries
In a food processor, mix your seeds, nuts, oats, desiccated coconut, salt and cinnamon. Whizz up to breakdown and blend leaving it slightly coarse.
Put your pan on high heat, I use my large frying pan for this. Once the pan is heated add the coconut oil, leave to melt then add the maple syrup
Add in the contents from the food processor, stir constantly for 3 to minutes ensuring everything is fully covered with the oil and maple syrup. Add in the vanilla essence. Stir again until golden brown.
Take off heat and allow to cool. Add in dried fruit and put in an airtight jar/container.
Simple, tasty granola ready to use!
