Fennel, apple and celery salad with sea bass
This is a very simple, tasty salad that goes really well with fish and is full of goodness. It’s light and a perfect dinner to start the week.
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
Sea salt and cracked black pepper
2 large apples, cored and chopped into matchsticks
1 medium fennel bulb, thinly sliced
1 celery stalk, sliced
Bunch coriander leaves, roughly chopped
2 seabass fillets or you can also use any other white fish
Prepare all salad ingredients, in a bowl mix the lemon and oil, put in all ingredients, season and mix through
Cook your fish as you like it. I plan seared my seabass.
Place salad on a plate and put seabass on too.
I then put a spoon of the herb pesto I made, this is optional but if you have some pesto it adds a lively extra flavour.
