Cabbage, Carrot and Coriander salad with lime and Sesame dressing

This is super simple and showcases seasonal veg this time of year. A definite one for you to try. I promise it will be a salad you make right through the summer!

Ingredients

  • 1/2 head white cabbage, shredded 
  • 3 carrots, grated
  • 3-4 spring onions, chopped 
  • 1 large handful of fresh coriander, chopped
  • Sesame seeds or cashews for garnish, (optional)

For the dressing

  • Juice of 1 lime
  • 1 tablespoon of  raw honey
  • 1 teaspoon good quality apple cider vinegar
  • 1 garlic clove, minced 
  • 1 tsp fresh ginger, minced
  • 1/2 teaspoon sea salt
  • 1 tablespoon toasted sesame oil

INSTRUCTIONS

  1. In a large bowl, combine the lime juice, honey, vinegar, garlic, ginger, salt, and sesame oil. Whisk well to combine.
  2. Add in the shredded cabbage, carrots, green onion, and coriander, then toss well to coat everything with the dressing. 
  3. Leave sit for a minimum of 15 minutes before serving to ensure the flavours are well combined
  4. Toss again just before you serve.
  5. Garnish with a few extra leaves of coriander, some sesame seeds or cashews also if you wish. 

This is gorgeous on its own or as a side for fish or meat. Perfect for those BBQ days!

Will last in the fridge for 3-4 days in a sealed container
