Beetroot and Feta Salad
This salad is a very simple one that highlights the delicious beetroot and feta cheese
Ingredients
- 1 beetroot, cooked and sliced
- ½ block good quality cheese
- Mixed fresh greens preferable from local producers
- Few cherry tomatoes, quartered
- Aged balsamic
- Pesto
- 1 tablespoon olive oil
- Salt and pepper to season
Method
- Put the greens and tomatoes in a bowl, add olive oil and season
- Place greens on a plate and top with sliced beetroot, crumbed feta and some pesto
- Drizzle some aged balsamic on the plate and serve
