Chickpea, Spinach & Cashew s with Cumin & Coconut
Chickpea, spinach & cashews with cumin and coconut
This is delicious, a wonderful mix of flavours. I love this with a mix of other salads or added to some rice as a vegetarian dish.
Ingredients
- I tbsp olive oil
- 1 large onion finely chopped
- 2 garlic cloves finely chopped
- 300g spinach leaves
- 1 x 400g can chickpeas (drained and rinsed)
- 150g raw cashew nuts
- 1 tsp ground cumin
- 2 tablespoon desiccated coconut
- Salt and pepper to taste
- Freshly chopped coriander, red chilli and lime to garnish
Method
- Heat the olive oil in a pan on medium-low
- Add the onion and garlic and cook for 4-5 min until softened
- Add the spinach and stir through until it wilts
- Add the chickpeas, cashews and cumin and cook for another 5 minutes.
- Season with salt and pepper
- In another pan, add the coconut (no oil) and toast for 1-2 minutes (watch carefully as it toasts very quickly and you don’t want it to burn)
- Sprinkle over the coconut serve up
- Garnish with some red chilli and coriander and fresh lime
