Basil and Cumin Hummus
No tahini basil and cumin hummus
Not everyone is into tahini and I get it. This hummus is utterly delicious. It was first introduced to me by my sister a few years back. It’s light and fresh, zingy with a gorgeous cumin and basil finish.
The below made 4 X 150ml jars, enough to share around with family or just eat it all yourself!! ?? This is best served that day but will last in the fridge for 3 to 4 days.
2 X 400g tin chickpeas
230g natural yoghurt
Juice of lemon
2 tsp cumin
40g fresh basil leaves
Good pinch salt
Drain and rinse the chickpeas well
Put in food processor
Add yoghurt, basil, ½ lemon juice, cumin, salt and blend for a few minutes
Taste and then add more lemon if you wish.
